Avocado Chicken SaladSpring may not officially arrive until March 20, but we’re celebrating National Nutrition Month all month long at Festival Foods with our Mealtime Mentors and that means highlighting dishes that are bright and colorful and full of the flavor of a new season.

All the reasons we really like this easy-to-make, grab-and-go recipe. And bonus: it includes everything from veggies to fruit (avocado) to whole grains to protein! We call it “Not your Grandma’s Chicken Salad” since we’re replacing the often-used mayo with savory avocado.

Avocados provide over 20 essential nutrients including potassium, fiber and B vitamins – along with heart-healthy fats – while still providing that same satisfying, creamy texture we all love in a chicken salad.

If you’ve never worked with avocado, it can seem intimidating but it’s really simple! To make this delicious filling, start by giving your avocado a quick wash with water. Using a sharp knife, slice horizontally around the avocado until you have two halves. Simply remove the pit and slice through the meat of the avocado.

Avocado Chicken SaladAdd your diced avocado to a bowl and mash with a fork until smooth. Stir in the lemon juice.

Next, you’ll mix your avocado with leftover, shredded chicken (we’re big fans of the newest addition to our Meat Department: organic chicken from Bell & Evans in Pennsylvania).  For an easy boost of veggies and flavor, mix in a half pound of our Lime Black Bean Fiesta Salad available at our Deli.

Stuff your fresh filling inside flatbread or try our sprouted grain bread from our Bakery. And boom! You’re ready to go with a delicious dish that will keep you full for hours.
